At Giovanni’s we do it Napoli artisan way

Biga is a pre-fermented dough to which, after fermentation for a minimum of 24 hours, the remaining amount of water is added to hydrate the dough by 70%. Then, the dough is left at a controlled temperature to ferment for another 48 hours. It improves the taste and makes it more airy.
